What You Need:

  • Muffin tray
  • 12 eggs
  • 3 breakfast sausage links, cooked and cut
  • 1/2 cup cheddar cheese
  • 1 red pepper, chopped
  • 1/4 cup green onion, chopped

(You can use other meats or vegetables if you like; this is just what we used.)

How To Make:

  • Set your oven to 375 degrees F.
  • Spray the inside of the muffin trays with non-stick spray.
  • In a bowl, beat the eggs together. Pour into muffin tins until each one is about half way full. Top eggs with peppers, onions, and sausage.
  • Bake egg muffins for 25 minutes, or until the muffins are firm in the center.
  • Remove from oven and carefully go round each egg with a butter knife. Serve warm.
